Sandwich with Mozzarella and Roasted Vegetables

Toasted sandwich melts gooey mozzarella with smoky roasted vegetables on high-protein Carl Brandt bread, crafting a Mediterranean masterpiece that’s effortless to prepare, bursting with caramelized veggie richness, and sustains energy for satisfying lunches or veggie-forward meals.
Ingredients:
  • 1 Mestemacher Toast Bread Rolls
  • 1 teaspoon of pesto
  • 2 slices of mozzarella cheese
  • 3 slices of zucchini
  • 3 slices of eggplant
  • ¼ red onion
  • ¼ red bell pepper
  • 5 snap peas
  • 1 teaspoon of margarine
  • Salt and pepper
Directions:
  1. Cut the vegetables into slices or pieces and briefly fry these in margarine. Add salt and pepper.
  2. Spread pesto on the lower half of the Toast Bread Roll, place the mozzarella slices on and then spread on the fried vegetables.
  3. Cover with the top half of the Toast Bread Roll.
