Christmas Pumpernickel Pralines

Treat yourself to Christmas Pumpernickel Pralines — rich, spiced pumpernickel bites rolled in festive toppings for an elegant holiday confection that’s perfect for gifting or snacking.
Ingredients:
  • 100 g Mestemacher Gourmet Pumpernickel
  • 150 g dates
  • 30 g coconut blossom sugar
  • 30 g cocoa nibs
  • 2 TL speculaas spices
  • 1 TL cinnamon
  • 1 TL cocoa
  • 2 TL coconut oil
For the coating: 
  • Coconut flakes, chopped pistachios, freeze-dried raspberry pieces & gold foil
Directions:
  1. Place all ingredients in a food processor and mix until you have a slightly crumbly, sticky mixture.
  2. Use your hands and form 12, evenly-sized balls with the mixture. Now roll the balls in your favourite coating, before placing them in the fridge for at least two hours.
