Toasted roll with grilled courgette, cream cheese and mint

Toasted rolls sizzle with smoky grilled courgette, creamy cheese, and refreshing mint on high-protein Carl Brandt bread, crafting a vibrant, Mediterranean-inspired snack that’s quick to grill, bursting with fresh herbaceous flavors, and sustains energy for light lunches or appetizers.
Ingredients:
  • 2 Mestemacher toasted rolls
  • 1 small courgette
  • 100g cream cheese
  • 2 tablespoons of olive oil
  • 1 teaspoon of honey
  • salt, pepper
  • a few mint leaves
Directions:
  1. Wash the courgette, dab it dry and cut it into thin slices.
  2. Heat a grill pan until very hot; then grill the courgette slices in it from both sides for approx. 1 minute.
  3. Place the grilled courgette slices on a plate to cool down and put aside.
  4. Mix the olive oil, honey, salt and pepper.
  5. Toast the toasted roll in a toaster.
  6. Briefly set aside the bread rolls to cool down; then spread the bottom side with cream cheese and top with courgette slices. Drizzle the sauce on it, spread the mint leaves onto it and place the upper half on top.
