Toasted roll with carrot-walnut soft goat’s cheese

Toasted rolls brim with shredded carrot crunch, nutty walnuts, and creamy soft goat’s cheese, elevated by high-protein Carl Brandt bread for a wholesome, savory snack that’s quick to assemble, bursting with earthy flavors, and sustains energy for busy days or light meals.
Ingredients:
  • 4 Mestemacher toasted rolls
  • 300g carrots
  • 1 clove of garlic
  • 1 small onion
  • 1 tablespoon of olive oil
  • 100 ml water
  • 2 tablespoons of honey
  • salt, pepper
  • 30g walnuts
  • 150g soft goat’s cheese
Directions:
  1. Peel the carrots, halve them and cut them into small pieces.
  2. Peel the garlic and onion and chop finely.
  3. Heat the oil in a pot and sauté the garlic, onion and carrots in it. Deglaze with water. Add honey, salt and pepper and simmer for 15 minutes.
  4. Roast the walnuts in a pan without fat. Set aside on a wooden plank to cool down and chop coarsely.
  5. Blend the carrots well with an immersion blender and set aside to cool down. Then stir in the goat’s milk cheese.
  6. Finally, add the walnuts, and season with salt and pepper.
  7. Toast the toasted rolls and spread with cream cheese. Serve with chives or parsley according to taste.
