Muffins with vegetables and three kinds of bread from the Premium German Bread Basket

Ingredients:
For 6 muffins:
  • any 3 packets of bread from the Mestemacher Premium German Bread Basket, diced
  • 125 ml vegetable drink
  • 1/2 tsp. salt
  • 1/4 tsp. harissa
  • 1/4 tsp. pepper
  • 1 shallot, finely diced
  • 60 g pickled courgette, diced
  • 60 g pickled peppers, diced
  • 1 tbsp. olive oil
  • 4 stalks parsley, chopped
  • 50 g vegan processed cheese
In addition:
  • 6 er muffin tray, lined with 6 paper cases
Directions:
  1. Mix the bread cubes with the vegetable milk and soak for 10 minutes.
  2. Mix all the other ingredients into the bread mixture, divide between the muffin cases and bake in the oven at 200 °C top/bottom heat for 20 minutes until golden brown. For the cold treat, remove the muffins from the tray and leave to cool completely in the paper cases.
