Falafel Wraps

Ingredients:
  • 1 Pack of Mestemacher California wraps wheat
  • ½ lettuce head
  • 1 handful of cocktail tomatoes
For the falafel
  • 1 tin of chickpeas
  • 1 small onion
  • ½ bunch of parsley
  • 1 clove of garlic
  • 1 egg
  • 1 pinch of cilantro
  • Salt and chilli according to taste
  • 1 cup of breadcrumbs
Directions:
  1. Chop the onion and garlic finely. Drain the liquid off the chickpeas and chop the parsley finely. Add all ingredients into a large bowl.
  2. Add the egg and seasoning and mix all ingredients together well. Then season to taste once again.
  3. Moisten your hands to form small falafel balls and then roll them in the breadcrumbs.
  4. Heat some oil in a pan and fry the balls until they are golden brown on all sides.
  5. Halve the tomatoes and slice the lettuce into bite-sized pieces.
  6. Spread some hummus in the centre of the wraps and top with lettuce, tomatoes and 3 falafel each. Fold the wraps, then wrap them in paper and serve.
