Almond Bread with Soft Goat Cheese and Khaki

Almond bread with soft goat cheese and khaki spreads creamy soft goat cheese over nutrient-rich Mestemacher Almond Bread slices, topped with ripe khaki (persimmon) fruit for a sweet-tangy contrast, creating an elegant open-faced delight that’s ready in 20 minutes and perfect with peach or nectarine alternatives.
Ingredients:
  • 1 ripe khaki (or sharon fruit)
  • 1–2 teaspoons of lemon juice
  • 2 tablespoons of strawberry or mixed berry jam
  • 4 slices of Mestemacher Almond + Wholemeal
  • 80 g soft goat cheese
  • 2 teaspoons chopped pistachio kernels
  • A little bit of mint for garnishing
Directions:
  1. Wash the khaki and remove the stalk. Halve the fruit down the length, cut it into slices and drizzle with lemon juice. Possibly spread the jam through a strainer.
  2. Place the slices of khaki on the slices of bread. Place the soft goat cheese and jam on it, sprinkle with pistachio kernels and garnish with mint.
Tip: Instead of the khaki, you can also use a peach or nectarine.
