Mushroom-Risotto Using Lotao Glam Wedding Pink

Ingredients

  • 1 cup rinsed Lotao Glam Wedding Pink Rice
  • 2 cups salted water
  • 1 ½ cups of broth
  • 1 pound of white mushrooms
  • 1 pound of portobello mushrooms
  • 2 tbsp. olive oil with mushrooms
  • 1 tbsp. olive oil in skillet
  • 2 chopped Shallots
  • ½ cup of dry white wine
  • 4 tbsp of butter
  • 1/3 cup of parmesan

Preparation

  1. Simmer one cup of rinsed Lotao Glam Wedding Pink Rice with salt on low heat for 10 mins.
  2. Slice portobello and white mushrooms
  3. Add olive oil to skillet and add chopped shallots
  4. Add black rice and stir
  5. Pour in white wine
  6. Add more broth
  7. Add butter and parmesan
